non tourist things to do in venice and rome?

I am going to spend 10 days in Italy at the end of July. What are the best non-tourist things to do? i love water and tipical food (food of the natives). Any day trip recommendations? Is it enough time to visit Rome? If so, what are best non-tourist things to do in Rome. Or should i visit another city instead? help!
Finally, any hostel recommendations in Venice or Rome?
First of all, italy in july is very hot, so bring with you t-shirts and shorts.
Day trip recommended while in rome is tivoli, with the roman villas (villa adriana and villa d'este). http://www.tibursuperbum.it/eng/monumenti/index.htm
In venice a day-trip recommended is to murano, where there are the glass factories.
While in rome you must:
1) eat a croissant after midnight (there are some "cornetterie" that open late in the night. The best one is in Via Giuseppe Gioacchino Belli, 63.

4) climb the s. peter's cupola and look at rome from the sky

Typical but not-too-much-tourist things to eat in rome
Eat a "granita di caffè con panna" (coffe ice crush with whipped cream) at café La Tazza d'Oro, close to Pantheon
Shop for food at Mercato di Piazza Vittorio (close to Stazione Termini)
Eat baccalà fritto (fried cod) in via dei Giubbonari (close to Campo dei fiori)
Eat any sweet thing at the jewish bakery in via Portico d'Ottavia

I have been to both Venice and Rome at various times of the year but I would avoid July or August if you can as both cities are hot and crowded.
You should see some of the usual places like the Forum, the Colosseum, the Vatican, Castel Sant Angelo, the Pantheon but I get most enjoyment from just wandering around. I pick a square (eg, Piazza del Poppolo) and then wander around the area. There is always something to see and do or nice food to eat and interesting shops.
If you plan on staying in hostels, the hostel will usually have information about cheap and interesting things to do. Also, you may meet fellow travellers who will have suggestions.
